Please can i have the recipe for Muhallabia, my children love it.

Muhallabia is a lovely desert made with rice and milk but unlike a rice pudding the rice in Muhallabia is finely ground which completely transforms the dish!
Ingredients: 1/4 cup rice powder, (you can grind the rice yourself if you wish) 3 cups milk Pinch of salt 1/4 cup sugar 3/4 cup almonds, ground to a paste 1 tablespoon rose water Pistachios and almonds to garnish
Method: Pour the milk (leaving a little aside) in to a pan and boil. Mix the rice powder and the remaining milk together to form a paste and add to it the salt and sugar. Once the milk begins to boil pour in the rice mix slowly stirring all the time. Keep stirring the mixture as it begins to thicken and bubble gently. Simmer on low heat for 5-10 minutes, stirring regularly. Stir in the ground almonds and rose water and remove from heat to cool. While the mix is cooling stir occasionally so it doesn't form a hard skin. Pour into a large serving bowl and garnish with nuts. Serve chilled.

Fried potato balls
Ingredients: 4-5 medium potatoes 1 egg 1 large brown onion 3-4 long green chillies (optional) 1 bunch of corriander salt chili powder flour oil
Method: Peel, chop and place potatoes in boiling water. Boil the potatoes until cooked. In the meantime dice the onion and finely chop the chilies and corriander. When potatoes are ready mash and mix in the onions, chili and corrainder. Add salt to taste and a sprinkle of chili powder. Make balls out of the potatoe mix and roll in flour. Beat the egg and put aside Heat oil in a pan and when ready to fry dip the balls in to the egg mix before frying.
Serve hot!
The non veg option is to fry up some mince meat and place in the middle of every potato ball.

Try this tasty and quick cold dessert that generally pleases everyone.
Peaches n Cream (serves 4)
Ingredients 225g Cream cheese 100g Icing powder 300ml Whipping cream 4 peaches, stoned and diced (you can also use tinned peaches if you prefer)
Method: 1. Put the cheese and icing powder in a mixing bowl and beat together until blended.
2. In a seperate bowl, whisk the cream until it is stiff, then fold it into the cheese mixture.
3. Now layer the peaches and cream mix in to a pretty glass dessert dish (have at least two layers of each) and serve chilled.

Please can you tell me how to roll the spring rolls properly. I do make them but want to know the correct method. Also can uplease suggest any easy and cook iftar recipe.

As for a quick Iftar recipe how about making spicey onion and potato fritters.
Ingredients: 1 Onion, cut into rings 1 Potato, cut into thin discs 1 cup gram flour A pinch of salt and red chili powder
Method: Place the gram flour in a bowl with the salt and chili and mix with some water - the consistency should be the same as for pancake mix, runny but not too runny. Dip the onion rings and potato sclices in to the mixture and then deep fry until they turn a nice golden colour.

Ingredients: A boiled shredded chicken 1 green pepper, cubed 1 small can of mushroom 1 can of sweetcorn 1 chopped onion 1 clove minced garlic 3 large spoons flour 3 large spoons powdered milk 3 large spoons Oat 1 cube chicken stock 1 large spoon of chopped coriander Salt, pepper and cumin to taste
Method: 1. Fry one chopped onion with a little oil then add the crushed garlic, mushrooms, green pepper, sweetcorn, stock cube and chicken to the pan. Cook on low heat. 2. In a separate bowl, mix three large spoons of flour, powdered milk and oats. Stir well and add to the pan, then add enough water to cover ingredients. 3. Cook for 45 minutes, garnish with coriander and serve.

Nadia says: Hi, this is a lovely simple recipe for onion soup and it's very low in calories.
Ingredients: 3 tablespoons butter 4/5 mild medium onions, thinly sliced 1 tablespoon flour 40oz of water (just over a litre)
Method: Melt butter in a pan, over a medium heat. Add the onions and saute until golden in color, for about 8 minutes. Sprinkle the flour in and slowly add the water. Add salt and pepper (optional), if the onion is quite sharp use some brown sugar to offset the taste. Bring to a boil, reduce heat and simmer for 25 to 30 minutes.
Serve with French bread or eat alone.

Ingredients: 2 cloves garlic, roughly chopped 1/4 cup lemon juice 1/4 cup water 400g canned chickpeas (drained) 1/2 cup tahini 1 teaspoon sea salt
Method: Place all of the ingredients in to a food processor and blend until smooth. Serve with a drizzle of olive oil on top.
